Some wineries feel like destinations. Others feel like traditions. Laetitia Vineyards & Winery has always been a bit of both—an enduring presence in the Arroyo Grande Valley and one of the Central Coast’s early champions of sparkling wine done with intention, care, and joy.

Laetitia Vineyards & Winery has a sparkling wine heritage going back to the early 80s, when it was produced at the same location by Maison Deutz, a Champagne maker in France. Since taking it over in 1997, Laetitia has been the Grande Dame of sparkling wine on the central coast, with 8 different sparkling bottlings at various times of the year.

For more than 43 years, Laetitia has focused on a simple but powerful idea: there is a celebration waiting inside every bottle. From vines rooted in limestone-rich soils, shaped by cool coastal influence, and crafted in the traditional French méthode, these sparkling wines are designed to light up moments big and small—with every pour.

Méthode Champenoise is how sparkling wine is made in the Champagne region of France, also called méthode traditionnelle or classique. This is the highest-quality and most labor-intensive way to make sparkling wine. It involves bottling the still wine with additions of sugar and yeast after a first fermentation, ensuring a second fermentation happens in the bottle, trapping the bubbles inside. It then goes through aging (and periodic turning of the bottles to force the lees to the neck of the bottle), until it’s ready for dégorgement (to get these lees out) and dosage (to finish the wine).

Laetitia’s home in the Santa Maria Valley offers the kind of growing conditions sparkling producers dream about. Cool mornings, afternoon breezes from the coast, and long growing seasons preserve acidity and nuance—essential ingredients for vibrant, balanced bubbles.

At the core of the sparkling program are Pinot Noir and Chardonnay, the classic varieties that bring structure, brightness, and elegance to méthode traditionnelle wines. Here, they express themselves with fresh citrus, crisp orchard fruit, subtle creaminess, and a clean finish that keeps everything lively and inviting.

The wines feel celebratory without being formal—polished, but never stiff. They’re just as happy at a sunlit brunch as they are at a milestone dinner.

While Laetitia is best known for bubbles, the still wines offer a deeper look at the site itself. Pinot Noir shows the valley’s cool-climate precision, with lift and restraint, while Syrah brings a darker, savory edge—proof that this landscape can handle both delicacy and depth.

Today, Laetitia’s sparkling collection offers a spectrum of bubbles for every palate and moment, as each bottle reflects the estate’s cool-climate precision.

  1. Sparkling Brut Rosé – “Delicate strawberry, watermelon and raspberry notes lift from a well structured, creamy mousse. It’s fresh, elegant, and effortlessly romantic, with delicate bubbles and a crisp mineral finish.”
  2. NV Brut Cuvée – “Gala apple, streams of bubbles and soft melon notes meet to create this festive sparkling wine comprised of Pinot Noir, Chardonnay and Pinot Blanc, respectively. Lemon chiffon and sultry pear framed by freshly baked challah bread come forward on second approach.”
  3. Sparkling Brut Coquard – “Beautiful aromatics of strawberry blossom and jasmine rise from the glass followed by enticing notes of juicy red berries. Its sumptuous mousse texture gently glides across the palate delivering delicious flavors of watermelon rind laced with rose petal and toasted graham cracker.”
  4. Sparkling Cuvée M – “Cuvee M Sparkling Wine, renowned for its radiant golden hue and a meticulous blend of 50% Chardonnay and 50% Pinot Noir, presents an enchanting symphony of flavors. On the palate, the delicate charm of Rainier cherry intertwines with the zesty allure of Key lime, while a subtle embrace of toasty pear adds depth. This full-bodied sparkler offers a luxurious, velvety texture and a lively effervescence.”
  5. Sparkling Brut Reserve (2017) – “In 2017, inspired by a recent trip to Champagne visiting some of the finest producers, particularly Krug, Eric Hickey and his father Dave had the idea to try a different approach to the “Laetitia House Style” of making sparkling wine. They selected top lots of Chardonnay and Pinot Noir and fermented them in barrels instead of the traditional stainless steel vats. Once bottled, the wine laid en tirage for 51/2 years before being finished, the longest of any sparkling wine Laetitia has ever produced. The barrel fermentation and long aging add depth, flavor profile, and uniqueness to this very special wine. Enjoy aromas of blooming flowers, ripe citrus, and marzipan with delicate flavors of hazelnut, jellied fruits, and brioche.”
