Some of the sparkling wine in San Luis Obispo County is exclusively for winery members, or can be purchased only online at the winery’s website shop.
Even though you can’t visit some of these wineries (or buy Bubbles when you do visit), you can contact them and ask for a tasting or appointment to pick up these bubbles. Sometimes, this is an even better treat! And some of these wines are the best in the area.

Online Only
1. Cadre
Cadre produces mineral-driven cool climate white wines made in the Edna Valley. The Sparkling Albariño is made from a SIP Certified Sustainable vineyard block (the same as their still Albariño, but picked at lower ripeness levels). It embraces Albariño’s ability to soak up all elements of the sea both above and below ground. Grown just 5.5 miles from the Pacific, this wine is made in the traditional style.
Méthode Champenoise is how sparkling wine is made in the Champagne region of France, also called méthode traditionnelle or classique. This is the highest-quality and most labor-intensive way to make sparkling wine. It involves bottling the still wine with additions of sugar and yeast after a first fermentation, ensuring a second fermentation happens in the bottle, trapping the bubbles inside. It then goes through aging (and periodic turning of the bottles to force the lees to the neck of the bottle), until it’s ready for dégorgement (to get these lees out) and dosage (to finish the wine).
2. Durham Cider + Wine
While this producer mostly makes delicious dry cider from apples, they do make a Pet Nat from grapes as well.
3. Haliotide
This sparkling-only brand was born of a love for Bubbly! Halliotide crafts California sparkling wine in the traditional method from grapes grown exceptionally close to the Pacific Ocean. Made by Nicole Pope and family (formerly of Stolo Vineyards), all tasks are done in-house and by-hand. Their wines are only available to their mailing list where you can gain early access to new and current wine releases. Various wine media has recently called this “one of the most exciting sparkling wine programs in the United States.”
4. Orlaigh
Orlaigh Wines was founded by 2 longtime friends, food and wine professionals who have spent most of their careers at highly-acclaimed restaurants in Los Angeles. They focus on small-lot, hand-crafted wines with low intervention by the winemaker and they source from from conscientiously-farmed, off the beaten path vineyards throughout the Central Coast of California. Their Pet-Nat is called Crackling Rosé of Pinot Noir, with organic grapes from San Luis Obispo County.
Pétillant Naturel, or Pét-Nat, is an even more ancient way to make sparkling wine than the widely-used méthode champenoise (also called méthode traditionelle) originated in Champagne, France. In the méthode ancestrale, the wine is bottled with a crown cap before it even finishes its first fermentation, so it develops carbon dioxide as it goes. It’s not disgorged, often unfiltered, and can be made from any grape variety.
5. Outward
Outward Wines produce small-lot, site-specific wines from California’s Central Coast; sourcing fruit from vineyards that are farmed using sustainable, organic, or biodynamic practices. They released their Bassi Vineyard Pét-Nat of Pinot Gris (méthode ancestrale) but it sold out quickly! Outward Wines can be purchased directly through their site and wine club, or from a handful of locations listed on Outward Wines’ site.

7. Scar of the Sea
Scar of the Sea focuses on working with farmers who are instrumental in farming for the future and making wines with as little intervention as possible. They produced two sparkling wines sold online – Rose of Pinot Noir (made in methode ancestrale) and NV Solera (made in methode ancestrale). Watch for what’s next!
8. Vines on the Marycrest
Vines on the Marycrest mostly specialize in reds, but they also have a few sparkling options. Their Beyond Belief Extended Triage Brut Rosé, Jive Talkin’ Sparkling Syrah, and Beyond Belief Brut Cuvée are all quite unique and made in the traditional method. Wines will be available for purchase online beginning in 2024.

9. Clos Solène
Clos Solène is a small, family-owned and operated winery tucked away in the rolling hills of Willow Creek AVA on the West Side of Paso Robles, CA. They offer wine lovers a membership that gives access to limited-production wines and access to purchasing wines on their site. One membership perk includes purchasing their sparkling Cuvée Juliette (made in the traditional method)!
10. Saucelito Canyon
Saucelito Canyon specializes in Zinfandels that express the natural qualities of the historic estate vineyard in the Arroyo Grande Valley. In previous years, Saucelito Canyon has produced their Côte de Blanc, Blanc de Noir, and Blanc de Blancs, all made in the same method as in Champagne. Taste their wines at their tasting room in the Edna Valley or purchase online.

12. Venteux
Venteux is located in the Willow Creek district of Paso Robles and specializes in Rhône varietals. Each year, Venteux releases their Pét-Nat and Fleur Blanc exclusively for members.
